Ingredients:
- 6 legs of chicken
- 3 garlic cloves, finely minced
- Salt and black pepper to taste
- 1 tsp oil
- ¼ piece of onion, in half moon
- ¾ kilo of green tomato
- 3 chipotle peppers in adobo sauce
- 2 potatoes cut into cubes
- ¼ cup chicken broth
- 3 bay leaves
Preparation
Heat a pot with a splash of olive oil and fry the onion with the garlic, stir continuously and let them take on a transparent and golden appearance, respectively. Add the pieces of chicken along with the potatoes cut into cubes, cover and let cook for about 20 minutes, pour a little of the chicken broth.
Meanwhile, wash and cut the tomatoes into cubes or in half if they are very large. Verify that the chicken has changed color and the potatoes are softer, once this step is done pour all the tomatoes and cook for about 8 more minutes over medium-low heat.
Season to taste and add the bay leaves, the chipotle to flavor. Let cook for about 5 more minutes checking that the chicken is fully cooked and the tomatoes have changed color.
