It is undeniable that the rise in gas prices heralds a blow to the end-of-month accounts of an average family. We are all using less heating, less hot water but above all less gas (also) from the stoves. Certainly we could not avoid cooking first courses or some types of pasta or fish but we can rediscover some vegetables to eat raw. Sometimes it is not even thought that some vegetable side dishes could be equally tasty even uncooked. It will also benefit your health because all the vitamins and thermolabile components (that is, which are exhausted with heat) will remain intact. Among the advantages of raw vegetables there is also the lower use of fat for the seasoning.
We just have to find out which vegetables will be marvelous even raw.

We hardly find courgette in salads but it is a very versatile vegetable and lends itself to a cold side dish. We cut the courgettes with a potato peeler lengthwise. Just season them with oil, garlic, basil, mint, salt and pepper. We add a few mozzarella cherries and serve at room temperature.
Not least will be the raw preparation of marinated zucchini. In this case we can cut them into sheets with a potato peeler or into thin slices. We will prepare a marinade with 3 tablespoons of extra virgin olive oil, 3 tablespoons of apple cider vinegar, 1 tablespoon of salt and 1 teaspoon of sugar. We will then put the zucchini to marinate for at least an hour. We will serve the zucchini on a plate, a few teaspoons of marinade and sprinkle with plenty of parsley.
Fennel can also be enjoyed raw. They are crunchy and in this way they release all the aromatic potential. Being also a source of minerals and water, they can be a perfect snack to break hunger. Olive oil, salt and pepper will be the ideal condiment for finely sliced fennel.
Well, even artichokes can be prepared in salads. They will naturally be carefully cleaned with a low cut of the thorns and the elimination of all internal beard. They will be washed and cut into thin slices, then placed in the refrigerator in cold water and lemon. As a condiment we prepare the citronette with olive oil, lemon, salt and pepper. Drain and dry the artichokes with a cloth and serve with the sauce. We embellish with parmesan flakes.
In this way we could save on the gas bill but also enjoy a tasty and original lunch or dinner.
It will surprise you to know that cauliflower is extraordinarily good even so as well as boiled, steamed, baked in the oven or in a pan.
