It hit the headlines thanks to a study conducted by Harvard University, although its benefits have long been known. But the researchers’ 30-year monitoring has attracted so much attention that now its reputation as a heart-saving food will lead to increased consumption. Yet 2 portions a week are enough to reduce cardiovascular risks. This is avocado, rich in monounsaturated fatty acids which, although not exactly a dietary food, becomes so when used to replace butter, margarine or processed meats. This fame also has its downsides. The data in the hands of the WHO say that its cultivation gives rise to massive deforestation in different parts of the world.

The first portion

Avocado is a nutritious fruit rich in essential elements for our body. Antioxidants and fiber are not lacking as well as vitamins A, C, E and also calcium, iron and potassium. To prevent heart attack and stroke, 2 servings a week would be enough, so we can prepare an appetizer for the first and a salad for the second. In addition to having these beneficial properties, it goes well with other foods and consuming it alone is a shame. Cleaning it is simple because there is a large core in the center. We can then cut it long with a knife by sinking the blade and turning around it. After having cut it into small pieces, let’s wet it with lemon because in this way, without oxidizing, it will preserve the color.

Cut 200 g of chickpea or almond cheese or legume slices into slices. They are foods rich in natural proteins that are very light and healthy. They can replace soy and tofu which are not always appreciated or tolerated by everyone. To complete the appetizer we can add 1 carrot, 2 tomatoes and 1 pepper. We season with 2 tablespoons of olive oil, with salt and pepper.

For an even healthier effect, we can prepare a salad using avocado together with artichokes. Artichokes are great for fighting hypertension and lowering cholesterol and are an important defense for the liver. They contain carotenoids, vitamin C, potassium, calcium and magnesium. It is therefore a salad that can be considered a superfood. We clean 4 artichokes and make a julienne with the hearts. To avoid oxidation and not to use lemon or vinegar, let’s soak them with parsley stalks. We cut 1 avocado and 2 apples with the peel. Remember that the skin of apples contains the highest percentage of fiber and vitamins K, A and C so it should not be eliminated.

If we want to disinfect them, let them soak with baking soda. Let’s create the salad and season with extra virgin olive oil, pepper and salt. When we combine foods such as avocados and artichokes especially with leafy vegetables, we obtain dishes that are important not only for the heart but also to prevent numerous cancers.
