Ree Drummond’s Carb-Eliminating Breakfast
Drummond says she starts her day off right with the carb-eliminating breakfast. This breakfast consists of poached eggs with sautéed vegetables and onions. She says that this food is one of her favorite things to eat from her first thing in the morning. Drummond says the carb-eliminating breakfast isn’t something she would normally make for her family, so it’s perfect for a day when she’s home alone.
Drummond decided to make this meal because it reminded him of a hotel breakfast he had when he was in New York City. “I didn’t even know what it was,” says Drummond in the pioneer woman Show. “I just saw it on the menu and thought, ‘I’m going to try that.'” She says it’s not a low calorie food, but it is low carb.
Preparing low carb breakfast

Drummond starts by chopping a zucchini and a piece of squash into large chunks. She also has pieces of onion in a pan sautéed in olive oil. Next, Drummond places the zucchini and squash in the pan with the onions, seasoning the mixture with salt and pepper. He then roasts some tomatoes and seasons them with salt and pepper.
For the next step, Drummond boils water and pours in some vinegar. As the water boils, she stirs it, forming what she calls a “whirlpool.” While the whirlpool is running, Drummond cracks two eggs and drops them into the pot. She says that she lets the eggs cook until the whites are set and the yolks are soft. Next, Drummond flips the tomatoes.
Drummond says that another breakfast component that cuts out carbs is chunks of cheese. For this recipe, Drummond cuts Swiss cheese, but says he sometimes uses Monterey Jack or pepper jack cheese.
Putting the finishing touches on the carb-buster breakfast
Drummond puts the finishing touches on his breakfast by putting a bed of vegetables on a plate. He then placed roasted tomatoes on top of the vegetables and chunks of cheese on the sides. Drummond says that the heat from the vegetables will soften the cheese. Next, Drummond places the poached eggs on top of the vegetables. She says that she tries to remove the eggs before they get too cooked. Drummond jokes that “overcooked poached eggs are a tragedy.”
Drummond then sprinkles salt and pepper over the eggs. Drummond says you can also add sausage. She says that her favorite part of this meal is cutting into the egg yolk. Drummond calls this “the breakfast of champions.”
Ree Drummond couldn’t get the carb-eliminating breakfast out of her mind
Drummond was so impressed with the low-carb breakfast she ate at a New York hotel that she went home and recreated it. “I recreated it at home since she hadn’t been able to get it out of my head since Saturday,” Drummond writes on The Pioneer Woman website. “I left out the sausage component, as poached eggs are the stars of the show, and of course you can substitute whatever vegetables you have in your fridge – mushrooms, bell peppers, etc. Oh, and a slice of avocado would be nice.”
