celebrate the taco day It was an extravagant idea at the time, because for a long time tacos were considered a popular food without much importance.
The origin of this event dates back to March 31, 2007, when Televisa organized an advertising campaign with the slogan “Because everyone has their day” seeking to add one more date to mass consumption promotions.
Taquerias and restaurants were invited to the parking lot of the Estadio Azteca, and also to Parque Papagayo in Acapulco, so there were tacos and musical performances that were broadcast live on television.
Beyond the event, the celebration had little importance, but over time the tacos established an undisputed reign in urban mythology and the #DELTACO DAY it became a legitimate holiday that is celebrated more and more.
The tortilla is the foundation of tacos, although we know little about its history. It is known that the maize plant was domesticated in Mesoamerica, as there are remains dating back more than 8,000 years. The origin of the nixtamal dough is also a mystery, despite the fact that the same pre-Hispanic process of cooking corn with lime is still used to generate a product with which atoles, tamales and tortillas are made!
What is a taco? It is the art of eating with tortillas.
In principle, tacos consist of three elements: tortilla, content and sauce.
A concept that in its simplicity allows many variants. Tacos are distinguished by their style, their region of origin, and their ingredients.
Here is the history of Mexico: pre-Hispanic tacos are made with the products of the milpa such as avocado, nopalitos and grasshoppers. An example of colonial cuisine is in the carnitas tacos, with their very spicy sauce. From contemporary cuisine we have Taco Governor, that has shrimp with cheese, and the tacos al pastor fuse the cultures of Mexico and Lebanon, since the top grill is typical of the Middle East.
Tacos lived for centuries in the kitchen of the houses, in the pulquerías, canteens and markets, but in the middle of the 20th century, thanks to the tortilla machine and commercial refrigeration, these businesses, fixed or mobile, were born, which today we call taquerías.
In 2021 the UNAM geographer Baruch SanginésHe investigated the taquerias that are in the country and according to his study, it only takes a few steps to find good tacos, since there are more than a million and a half taquerias throughout Mexico.
In tacos there are no fixed rules, that’s why everyone orders them in their own way and finishes them to their liking.
