L’spelled salad it is a wonderful idea to make the most of this delicious cereal rich in properties: an alternative to the classic rice salad, it can be served both as a first course or as a main course, it all depends on the ingredients you use to enrich it. It is a dish that can be customized to your taste and seasoned with cooked or raw ingredients, sauces, such as pesto, or tomatoes, legumes and cheeses.
Spelled is a cereal which, thanks to its high fiber content, helps to keep blood sugar under control. It is rich in proteins, vitamins, minerals and low in fat. These characteristics define it as an ally of the bones, heart and intestines. So many valid reasons to add it to our diet. Unfortunately, spelled contains gluten and is therefore not allowed in the diet of celiac or intolerant people.
On the market you can find two types of spelled, the hulled and the pearled one. Either way it goes washed very well to remove all impurities: rinse it in cold water until the water is clear. If you have purchased hulled spelled, we advise you to put it in soaking in water cold for a time ranging from 4 to 12 hours depending on the type, before cooking.
This step serves to soften the beans and reduce cooking times.
The pearl spelled is more refined, because in addition to having lost the glumetta it undergoes a process similar to that performed also in rice or barley: this allows it to be cooked in about 20 minutes. In both cases, follow the directions on the package.
For cook the boiled pearl spelledfill a pot with water – count twice the water compared to spelled – bring everything to a boil, add salt and pour the cereal. Leave cook the spelled covered for about 20-30 minutes. When it is cooked, let it rest in the pot for 10 minutes to allow it to absorb all the water. If you want an even tastier spelled salad, cook spelled in the vegetable broth.
You can cook the spelled with the pressure cookerthus halving the cooking times: pour the spelled into the pot, cover completely with water, add salt and cook for 10 minutes.
In addition to being a salad, farro lends itself to being cooked in other ways: you can prepare the farrotto, preparing the farro as if it were a risotto; or added to soups; finally you can use it to prepare particular arancini.
A’excellent spelled salad it is a balance of ingredients, flavors, textures: the classic spelled salad with tomatoes and feta is the best known combination but we recommend other possibilities and experiment with your imagination.
Cooked vegetables: add seasonal vegetables roasted in the oven with plenty of oil and spices to your spelled salad. They will remain moist but crunchy on the outside: roasted peppers, roasted aubergines, confit tomatoes and in winter Brussels sprouts, baked fennel, pumpkin. If you have leftover vegetables au gratin they will be perfect to add to the salad.
Raw vegetables: the raw component gives crunchiness to your salad, each bite will stimulate chewing and the dish will not bore you. So off to grated carrots, diced raw zucchini, celery, cucumbers, tomatoes.
Herbs: they must not be missing, indeed, abound! A mince of basil, parsley, mint, gives the dish a unique aroma. But also dill and fennel. If you don’t have them fresh, use dried herbs, but don’t overdo it, they usually have a more intense scent.
Cheeses, legumes … proteins: here is your taste. A tasty cheese or the well-known milk sweets are always good. If you want an even richer dish, add grilled chicken, or boiled legumes, tuna or sardines in oil.
Sauces and spices: even here the imagination is your friend. Try a basil pesto, but also dare with a carrot leaf pesto, a dried tomato and almond pesto, and then harissa, curry, turmeric. What you like best.

The conservation of the farro salad depends a lot on the seasonings you have added. Boiled spelled, stored in the refrigerator in an airtight container, can last up to 4 days. You can prepare the farro salad one day in advance and once prepared, if it should be left over, keep it in the refrigerator for up to one day.
