Recipe: pistachio cookies

In addition, there are so many varieties that it is impossible for one to get tired of cooking them. Therefore, in digital freedom we have become innovative and have prepared them with pistachios.

The pistachio cookies They are ideal to drink with coffee or as a treat between meals. They are easy to make and very tasty on the palate, the mix of chocolate with pistachios is great. Ideal, in addition, to prepare them with the smallest of the house.

In addition, despite eating a healthy diet and taking care of both food and exercise, there is always room for some homemade sweets like these pistachio cookies with cocoa nibs. Therefore, from digital freedom We bring you a very simple recipe with which you can all enjoy in the kitchen preparing them and then eating them. Do not forget to take paper and pen so you do not miss anything of the recipe.

Ingredients (for nine cookies):

  • 160gr of pistachios
  • 100g of chocolate 85%
  • two chicken eggs
  • 100g of oatmeal
  • 90gr of dates
  • three tablespoons of ground almonds
  • a teaspoon of chemical yeast powder

preparation:

Before starting we need to know that we need pistachios in cream, for this we have two options: buy it or prepare it at home. To make it at home you need 160g of peeled pistachios, a grinder and a lot of patience.

The first thing we must do is crush the pistachios until we get the texture of spreadable cream, then we add the rest of the ingredients (chopped chocolate) and mix until we obtain a homogeneous mass.

Here we preheat the oven to 180ÂșC while we form our cookies. We take a little dough and shape it into a ball, flatten it until we obtain the cookie thickness we want and, as an option, decorate with some chopped pistachios and cocoa nibs. Tip: impregnate your hands with olive oil as the dough is sticky.

Once we have all ready we put them on parchment paper and bake for 10-15 minutes, everything will depend on the size of our cookies and if we like them more juicy or crunchy. When this time has passed, we simply have to let them cool and they will be ready to enjoy.
