Oatmeal and chia pancakes: for a different breakfast or snack

We bring you a healthy pancake recipe, with few ingredients and delicious. Ideal for a midweek snack, a breakfast on cool days or a Sunday when you take your time to enjoy.

Fresh mornings make us crave something sweet and rich to accompany our infusions, from cookies to biscuits, but to choose a healthier and more homemade option, we opted for the combination of oatmeal and chia.

They are a very good pair to start the day because oatmeal contains fiber and protein, it is gluten-free and is recommended for diabetics since it regulates blood sugar levels and lowers bad cholesterol. On the other hand, chia is rich in omega 3, calcium, antioxidants, as well as fiber and protein.

This healthy pancake recipe was created by youtuber Carol Chang -who is a reference in beauty and nutrition tips- and to make it we are going to need:

– 1 cup of milk, it can be of animal or vegetable origin – 1 cup of Oatmeal – Sweetener to taste – 1 tablespoon of Peanut Butter – 2 tablespoons of Chia – Half a Banana – 1 egg + 1 egg white – Vegetable oil

Preparation mode:

In a blender put the oats, eggs and milk, once integrated add half a sliced ​​banana and the sweetener, continue blending until it has a consistency similar to the tortilla mixture. If the batter is a little thick, you can add a little more milk. Finally, the chia is added and mixed with a spatula.

In a hot skillet with oil add the mixture, let it cook until it releases some bubbles and turn to brown the other side, once cooked to our liking remove the pancake and continue cooking the rest of the preparation. The more mixture we put in the pan, the thicker our pancakes will be, so this is already tailored to the taste of each one.

To finish, we plate our crepes and add the peanut butter, it can also be used as Addition a jam or honey.
