Mole, pizza and pozole, menu for AIFA employees

To feed the almost one thousand workers who will work at the new Felipe Ángeles International Airport (AIFA), the state company of the same name that will operate the airport complex launched the tender for the subcontracting of the food service for its employees.
The AIFA-LPN-SR M-SVS-003/2022 tender indicates that the company to which the contract is assigned will have to guarantee the preparation of hot breakfast, lunch and dinner rations for 970 workers of the work that will be inaugurated on March 21 by President Andrés Manuel López Obrador.
It is detailed that in the preparation of food, the winning company must have a dining room supervisor, a chef, two cooks, three kitchen assistants per shift and a dishwasher, who must have their full vaccination certificate against Covid -19.
The women who work preparing these foods will have their nails cut daily, without polish, without jewelry on their hands, neck and ears; while men must have cut nails, no mustache or beard, short hair and not wear jewelry.
It is detailed that breakfast will be served from 6:45 a.m. to 7:45 a.m., lunch will be from 1:00 p.m. to 3:00 p.m., and dinner from 6:00 p.m. to 7:00 p.m.
The bidding decision will be given on March 24, at 12:00.
For breakfast, steak burritos or ham cakes. The tender indicates that for breakfast AIFA workers are expected to be able to choose between Mexican-style eggs, in green sauce, with sausage or with ham; Spanish cake, omelette poblano or ham with cheese, roast beef and tuna croquettes with potatoes.
They could also choose green or red chilaquiles with chicken, paired with ham and cheese, steak burritos, traditional ham cakes, bean and cheese muffins, or pancakes.
At breakfast, American coffee, orange, grapefruit, tangerine juices, and chopped fruit, such as melon, peach, watermelon, papaya, apple, guava, banana, and pear, will also be offered.
To accompany the coffee, employees should be offered a choice between a shell —chocolate and vanilla— sugar donut and chocolate donut, ears, cuernitos, shortbread or bolillo.
For breakfast to have flavor and spice, it must be guaranteed to have traditional green sauce, chipotle, green with coriander, ranchera, taquera, and pico de gallo.
For lunch, the staff will be provided with a hot ration that will consist of a dish to choose from, such as milanese and breaded breast, breaded fish fillet, beef in pasilla sauce, garden chicken, beef entomatado, steak roll with vegetables , beef hash, beef meatball, steak with onions, stew, beef hamburger, Hawaiian or pepperoni pizza, hot dogs, beef and chicken tinga, as well as pozole, fried beef, chicken or potato tacos.
Also chicken with mole, chicken in poblano chili, chicharrón in red and green sauce and as soup there will be pasta, vegetables, Aztec, cream of corn, carrot, lentils and chicken and vegetable consommé.
For dinner hot dogs and enchiladas. In the case of dinner, AIFA workers will be offered red chicken enchiladas, beef tinga, grilled chicken breast, beef and chicken wire, sopes, quesadillas, synchronized ham and cheese, hot dogs, chicken and beef, Swiss enchiladas, ham and cheese club sandwich, and ham croissants.
As a side dish there will be green enchiladas, refried beans, potatoes with parsley, corn with butter, saratoga potatoes, Bolognese pasta and mashed potatoes and tortillas. As a drink there will be American coffee and tea, and to accompany it you can have a piece of chocolate and vanilla shell, donuts, ears, cuernitos, shortbread, shortbread, pancake or biscuit.
The tender details that the awarded company will be solely responsible for employer commitments arising from legal provisions and other regulations in civil, criminal, fiscal, labor and/or social security matters.
