It is in the same communities where the Mexiquense identity is preserved from the traditional techniques that have been preserved for generations, and from a fragment of volcanic stone, a chisel, mallet and other tools that the masters of the Popular art they manufacture.
Also, its use in Mexican Kitchen represents a significant contribution in the recognition of national gastronomy as intangible cultural heritage of humanity, seen in the traditional use of the molcajete and metate and the unique flavor that is obtained by preparing food with these kitchen instruments.
The molcajete It is a piece that, due to its concave container shape and stone material, is used to crush spices, seeds, fruits, vegetables and foods that are intended to be crushed, disintegrated or pulverized with the help of a piece known as tejolote.
The metate It implies a larger piece, oval or rectangular in shape, its function is to grind food and its name originates from the Nahuatl, metlatl.
It is accompanied by a second piece called metlapil, which varies according to its form and function: short, where a grinder’s hand intervenes; medium, which is used with both hands and adjusts to the width of the metate; and a long metlapil that exceeds the width of the metate and is used by the hands of the person who grinds.
The origin of the elaboration and use of these utensils dates back to pre-Hispanic times, and the interpretation of their use agrees that they were used to crush, grind or crush mineral substances to obtain paint and to grind or crush grains, plants, herbs, species and condiments for preparing medicinal foods and beverages.
The conservation of its existence and use resides in the hands of teachers of popular art who continue and transmit the production of these utensils based on ancestral techniques.
