Garten demonstrated how to make his thick banana bran muffins on an episode of barefoot countess. “This is so good for you,” she said as she began her easy breakfast recipe.
Garten first combined buttermilk with a cup of raw bran. She mixed the ingredients in a bowl and let them sit so the buttermilk absorbed into the bran. “And it will make really moist and hearty bran muffins,” she shared of her advice.
Garten noted, “It just makes a very moist bun. Lots of texture.”

Garten adds flavor with healthier ingredients
Garten mixed the butter and brown sugar in a stand mixer for 5 minutes and added the eggs, one at a time. “If it looks curdled at this point, don’t worry,” he said. It will be OK.”
the barefoot countess star added molasses next, explaining, “Molasses is really cool, it gives it a lot of flavor. It’s sweet, but it’s also a little dark and smoky at the same time.”
She then added vanilla and orange zest to the batter. “These have so much flavor because there are so many different things going on in them,” she explained. Garten added the bran and buttermilk mixture to the blender.
She sifted the dry ingredients (flour, baking powder, baking soda, and salt), then added them slowly while the mixer ran on low speed.
“Now I’m going to add a lot of delicious things to it,” Garten explained. He added raisins, chopped banana, and chopped walnuts and doubled the ingredients. “You don’t want to break up the bananas too much, so you’ll want to do it with a spatula,” he advised.
He used an ice cream scoop to fill paper cups into a muffin tin. “This is what I always use to make muffins…a standard scoop of ice cream, then they come out exactly the same, each one,” she explained. “Something that overflows a little bit, it’s the perfect size.”
Garten baked the buns in a 350 degree Fahrenheit oven for 25 to 30 minutes.
