However, these are the basic tools used daily by Marine Liaigre, alias Marine Fairy Cakes, to create her “design” cakes in her laboratory in Champniers.

Behind Anglicism, there is a fashion from the United States: the art of decorating cakes for special occasions, without skimping on colors, even sugar paste figurines. “Imagination is the only limit”assures Marine Liaigre. The sponge cake, the base

“The base is a sponge cake”asks the graduate of a CAP pastry, passed in alternation at the secondary school of the trades of the Amandier, in Saint-Yrieix. The recipe is simple: 4 eggs, 125 grams of sugar, 125 grams of flour, half a sachet of baking powder. The secret is the speed of execution.

“It’s better to have a pastry robot to make the sponge cake (incorporating the egg whites, sugar, yolks, flour and yeast in order)it’s a great time saver! » Count 50€ for an entry-level robot, in the Continental Edison or Livoo brands. The art of modeling sugar paste

The cake is filled, it remains to decorate it. This is the most fun, creative part, but also the most technical. With experience, Marine Liaigre can transform pieces of sugar paste into cagouille or small bees (like the cakes in the photos that accompany this article).

“It handles like modeling clay. I then give the shade I want with food coloring. I mix several to get more complex colors. » Her trick: gel coloring, “so as not to moisten the sugar paste too much, so that it remains easy to work with. » For surgical precision, Marine Liaigre handles the scalpel on a silicone cutting mat. Then it’s a question of a helping hand and patience.

An edible paper printer

If you’re not comfortable with a scalpel (and that’s understandable), and still want to personalize your cakes, there are… food printers! “Ink and paper eat each other. It is unleavened paper, like a wafer in church”jokes the pastry chef.

She uses hers for some orders, which she charges less. “It takes a lot less time than a hand massage. » The possibilities are endless, even if you have to pay a nice sum. The model of the Gatocopy brand sold at Cultura costs for example 350€.

Online courses and in Bordeaux

There is no specific training for “cake design” in Angoulême. The nearest cake decorating school is in Bordeaux. Zouli’Cakes, in Cadaujac, offers courses, but it’s not cheap: from €1098 for five days to €6696 for six weeks. This last formula promises to give all the keys to then create your business.
