What is poke
Poke was born as a traditional Hawaiian dish in which the combinations of ingredients are infinite and customizable. The name literally means “cut into cubes” and refers to the main ingredient, fish. It is a salad of raw fish marinated briefly, enriched with various appetizing and tasty ingredients such as chilli and spring onion.
The poke knows many variations of condiments and combinations such as the one influenced by Asian cuisine, with the use of sesame oil and soy sauce. Traditionally poke is made with tuna, but today octopus, salmon or shellfish are also used. The combinations of ingredients are so many that the build-your-own-bowl formula has spread in restaurants, that is, you create a personal poke salad by choosing the ingredients you prefer to accompany it with, a captivating way to enjoy the poke that you could also reply in an evening with friends.
The base of the dish can be rice, sushi, or quinoa, mixed salad, rice noodles or a simple mixed salad, to which is added salmon, tuna, seared shrimp, steamed; or tofu for vegans. The dressing includes soy sauce, sesame oil, lime, coconut milk with the addition of spices in different combinations. The poke is finally completed with a topping of wakame, edamame, avocado, or even, an imaginative crunchy touch with sesame seeds or maybe chopped nuts such as pistachios, almonds, walnuts.

- ton 550 g;
- spring onion stalks 20 g;
- sesame oil 20 g;
- 1 tsp sesame seeds;
- fresh hot pepper 20 g;
- Hawaiian salt 1 tsp;
- soy sauce 20 g.
Procedure: to make the poke make sure you have purchased fresh culled fish. It is recommended, as a precaution, to freeze it in the freezer for 96 hours at -18 degrees and then defrost it for use in the recipe. So start with the preparation.
Remove the stalk from the fresh chilli, extract the internal seeds, then slice it so as to obtain small slices. Now take the stem of the fresh onion and chop it. Switch to the tuna, cut it into 2 cm slices, then reduce each slice into strips and finally from this cut into 2 cm cubes. Transfer the diced tuna into a bowl, season with the chopped spring onion stalk, the fresh chilli pepper, also add the white sesame seeds, sprinkle with sesame oil and soy sauce. Finally, season with a teaspoon of salt. Stir with a spoon to flavor. Cover the bowl with cling film and leave to marinate in the refrigerator for 1-2 hours. After the marinating time has elapsed, take your poke back and serve it.
