Lent comes from the Latin “quadragesima” which means 40 days before Easter, a religious period characterized by fasting and abstinence from meat.

It must be remembered that during this period people are used to fasting in some episodes of time, or not eating Red meat.

According to beliefs, red meat cannot be eaten during this festivity because for the religious, it represents the body of Christ crucified. For that reason, most Catholics tend to prepare dishes based on fish, shellfish, as well as some birds. (chicken or turkey) to name a few.

Especially on Fridays of Lent is when they prefer to cook with fish or chicken. According to the Agrifood and Fisheries Information Service, there are some species that can be prepared during this time.
