To obtain fontina there are 3 determining factors:

  • the quality of the milk: fontina must be obtained only from cows belonging to the Valle d’Aosta breed;
  • milk processing: the heating must not exceed 37 °;
  • fermentation of the microflora: made up of sixteen different species.

The nutritional values are divided as follows: 41 g of water, 24.5 g of protein, 26.9 g of fat, 82 mg of cholesterol. It also contains mineral salts and vitamins (A, C, E).

Fontina is a particularly fat and caloric cheese, as it is obtained from whole cow’s milk, the vitamin content is optimal, it is a good source of protein and contains few traces of lactose. The latter are below the “toxic” value, so it shouldn’t hurt. Obviously this varies from person to person, also based on one’s degree of intolerance. It is rich in sodium, calcium, phosphorus. As for proteins, it has a particularly high content of vitamin A. It has about 420 micrograms per 100 g of product. This could be useful for vision, for tissue regeneration. It is a cheese that can be eaten like any other.

For the lactose intolerant this is an excellent alternative to participate in lunches by the sea with serenity. It is important to know how to choose which cheese to use in the kitchen for this category of subjects.
