200 gr of spelled;

50 gr of feta cheese;

50 gr of Greek black olives;

1 red onion;

1 handful of capers;

Cook the spelled in boiling salted water, drain it slightly al dente and stop cooking under running tap water. In the meantime, prepare all the ingredients in a bowl, starting with cleaning and soaking the onion, chop the capers and olives according to taste, they can also remain whole. For the all cold solution you can opt for carrots, celery, onion, zucchini, beets, carousels, cucumbers, tomatoes, corn, peppers. But also precooked legumes such as lentils, chickpeas, beans. Or the version cooked with some of those mentioned above but also with aubergines, peas and everything that comes to mind sautéed and combined with spelled. Ingredients for 2 people:

150 grams of spelled;

2 cans of tuna;

10 dried tomatoes;

4/5 fresh mint leaves;

extra virgin olive oil to taste

Always cook the spelled in boiling salted water, let it cool. Once it has cooled, put it in a bowl and add the tuna: we can choose the natural one or the one in oil. Cut the dried tomatoes and mint into thin strips. Combine everything and enjoy happily. The only caution is if we choose tuna in oil and tomatoes in oil we do not add any more oil otherwise the dish will be too heavy.

A perfect recipe for the summer is the cold spelled salad with prawns, a real delight with the scent of the sea.

Ingredients for 4 people:

240 gr of spelled;

350 gr of prawns;

Juice and zest of one lime;

250 gr of yellow cherry tomatoes;

Sesame seeds to taste

Salt to taste

The procedure for cooking spelled is always the same: boiling salted water and drain rather al dente, but not too much. While the spelled is cooking, clean the prawns and marinate them with a drizzle of oil, a little lime zest and its juice with salt and pepper. At this point we heat a non-stick pan and sear the shrimp without a lid for a few minutes because the liquid must evaporate. We wash and chop the yellow tomatoes and start composing the dish.
