The visual rendering is a real work of research and testing. For the realization of a custom-made cake, the colours, shapes and textures count, each detail is important: “You have to be subtle about the composition because the assembly of a cake design takes time. We prefer ganache, mascarpone cream, crispy praline, pieces of fruit or even salted butter caramel to a cream that is too sensitive”, describes the pastry chef.
