Scallop salad, ingredients and procedure
A mouth-watering dish, based on scallops, shrimp, potatoes and cabbagea rich salad perfect as a second course but also as a condiment for a fish-based first course. Here is Bruno Barbieri’s recipe.
INGREDIENTS (doses for 1 serving)
- 3 scallops
- 4 prawns
- Cabbage to taste
- 1 potato
- 1 chilli
- 1 shallot
- Oil to taste
- Sale to taste
- Tuna sauce to taste
- Basil to taste
PROCEDURE (about 35 minutes)
Let’s start this dish by preparing the tuna sauce in advance (you can find the recipe in this article) and then, after having washed and cleaned the cabbage, we we cut a julienne part and we keep it aside.
So let’s take care of the potato, then peel it and cut it into slices, then transfer it to a pan with a drizzle of oil and the shallot, salt and let it cook until the potato is soft.
Then take the prawns, clean them and put them in a pan placed on the fire with a drizzle of oil and the chilli. Let them brown for a few seconds, then add the scallops, salt and let it cook for a few minutes.
We turn off the heat and remove the fish from the pan, then wait for the potato to finish cooking and let’s proceed to the dish.
