One of the great unknowns of the Mexican population has always been this…green or red sauce? Many will believe that it is a simple answer because they already have their favorite in advance, for others, it will be more difficult for them to choose one.
Although in both options the basic ingredients are chillies, onion and garlic, the method of preparation and therefore the result is different. If you are one of those who are still in the dilemma, today I will present you three delicious dishes that you can prepare with green saucethat will surely help you a little in choosing the winner.
Swiss enchiladas
Ingredients for the sauce:
- 10 pieces of green tomato, perfectly washed.
- 3pz of serrano chili
- ½ piece of white onion
- 2 cloves of garlic
- 1 very small bunch of coriander.
- grain salt to taste
Procedure:
In a medium saucepan, place the green tomatoes, onion, garlic and serrano peppers and cover with water.
Bring to a high heat until it boils.Once this point is reached, strain the ingredients, without throwing away the water, and blend them until they are perfectly smooth.
In another hot pot, put a little oil and pour the blended sauce. If we think it is too thick, we use a little of the water where the ingredients were boiled.
Add salt to taste and let it boil for a few minutes. Halfway through cooking, add the coriander bouquet and let it come to a boil again.

Ingredients for Swiss Enchiladas.
Green sauce
- 1 stick of cream cheese
- 10 pc of fried but soft tortillas
- 400 gr of shredded chicken
- sour cream to taste
- 200 gr of Manchego cheese to melt
- White onion filleted to taste
Procedure:
In a medium saucepan, place the green sauce and leave over medium heat. In a separate bowl, place the cream cheese so that it softens a bit, and temper it with a ladle of green sauce. We return to the pot and let everything be incorporated. If necessary, we can go through a blender.
We pass our fried tortillas through this sauce, fill with shredded chicken and arrange as folded in our refractory
We bathe with sauce until they are well covered, cover with Manchego cheese and grate with sour cream.
We take them to the microwave or to the electric oven so that they gratin and accompany with filleted onion.

green chilaquiles
Ingredients:
- Green sauce
- tortilla chips to taste
- Sour cream
- Sliced onion
- grated panela cheese
- Grilled steak
Procedure:
In a pot with the hot sauce, add a little tortilla chips, wait for them to dissolve to thicken the sauce.
In a bowl add the tortilla chips and bathe with sauce, mix well and serve
Decorate with sour cream, grated cheese and onion, accompany with a roast beef
Chicken patties in green sauce
Ingredients:
- 2 cups of shredded chicken
- 2 pc of egg
- ½ cup of flour
- Salt and pepper to taste
- Vegetable oil in sufficient quantity
- Green sauce
Procedure:
In a medium bowl, place the chicken, salt and pepper. Add the previously beaten egg and flour.
Form some pancakes and fry in a little oil. When they are golden, we add them to the hot green sauce.
We let it break the boil and we are ready.
